- Dates: Dried dates are an incredibly nutritious ingredient that adds sweetness to desserts. We’ll be using dates in both the base and the cheesecake puree.
- Walnuts: To add some more delicious nutrition to our dessert, we’ll finely chop some walnuts and mix them into the base.
- Honey: To sweetened the cheesecake.
- Soft cheese: The star ingredient for our mousse-like cheesecake.
- Cocoa powder: Dates, walnuts, and cocoa are a match made in heaven. This unique blend adds the perfect balance of flavor without being too sweet.
- Gelatin: To set the cheesecake and give it a mousse-like texture.
HOW TO MAKE CHEESECAKE MINI CUPCAKES WITH WALNUTS AND DATES:
To make these mini cheesecake cupcakes, simply:
- Grind the dates and the walnuts. Using a food processor, grind together 100g of dates and the walnuts.
- Place the mixture into the silicone mold. Place the mixture on the bottom of the silicone molds and tamp with a glass or a spoon.
- Soak the gelatine. Soak the gelatine in water according to instructions.
- Add the dry ingredients. Gradually add in the dry ingredient mixture and beat until it is evenly incorporated.
- Mix the rest of the ingredients. Mix together the soft cheese, honey, 30 g dates, and cocoa powder with a blender until smooth.
- Mix the gelatine with the curd. Transfer the swollen gelatine to a saucepan and dissolve over low heat. Add the curd mixture and mix thoroughly.
- Pour into molds. Pour the mass into molds on the prepared base.
- Refrigerate. Place the mini cakes in the refrigerator for a few hours, until completely set.
