This peanut butter cookies recipe is so easy to make, even kids can do them! Crunchy and delicious, they’re perfect for breakfast or dessert and they don’t require much time or effort.
A timeless classic, that never fails to put a smile, especially on my daughter’s face. This last weekend, we’ve been both in the kitchen busy baking a wholesome bowl of peanut butter cookies. A classic recipe, that you can throw together in a matter of minutes, with ingredients that you probably already have in your cupboard.
For an extra peanut butter flavoring, this recipe calls for both peanut butter and finely chopped unsalted peanuts. To make the peanut butter cookies less crumbly, we’ll use enough fat (butter) and chill the dough before baking. I like my PBs a bit chewier, using only brown sugar rather than white sugar will make the cookies moist and chewy.
Fast forward to day 3, the cookies are softer and the flavors heavily pronounced. Absolutely delicious! Just like the cookies you get at bakeries.

PEANUT BUTTER COOKIES INGREDIENTS:
To make this banana bread with chocolate chips recipe, you will need:
- Butter: Softened unsalted butter to easily mix it with the peanut butter.
- Peanut butter: I like to use chunky peanut butter.
- Sugar: To enhance the flavors, we’ll be using brown sugar.
- Egg: A lightly beaten egg to naturally hold everything together.
- Flour: I typically use all-purpose flour for this classic recipe, but white whole wheat flour can work too.
- Unsalted peanuts: For that extra peanut flavor, we’ll use finely chopped unsalted peanuts.
- Baking powder: To create cookies with a light and airy texture.
- Spices: We will use ground mixed spices. Feel free to adjust the spice proportions to your taste.
- Salt: To bring out all of the delicious flavors. If you’re using salted butter, don’t add more salt to the mixture.
HOW TO MAKE PEANUT BUTTER COOKIES:
To make this banana bread with chocolate chips, simply:
- Mix the butter and peanut butter. Beat together the butter and peanut butter using a hand or stand mixer.
- Add the sugar. Gradually add the brown sugar and mix well.
- Add the egg. Lightly beat the egg and add it to the mixture a little at a time. Beat well after each addition until it is thoroughly combined.
- Add the flour, baking powder, mixed spices, and salt. Sieve the flour, baking powder, mixed spices, and salt into the peanut butter mixture.
- Add the peanuts. Using a food processor, finely chop the unsalted peanuts. Add them into the mixture and bring all the ingredients together to form a soft dough. Do not overmix.
- Chill for 30 minutes. Wrap the dough in clingfilm and chill in the refrigerator for about 30 minutes.
- Preheat the oven. Preheat the oven to 190C/375F/Gas 5.
- Form 20 dough balls. Form the dough into 20 balls and place them on a lined baking tray about 5cm (2in) apart to allow for spreading. Flatten them slightly with your hand.
- Bake. Bake for 15 minutes, until golden brown. Transfer the biscuits to a wire rack and leave to cool before serving. Enjoy!
COOKIES VARIATIONS:
- For a crunchy bite and sparkling appearance, sprinkle the biscuits with demerara sugar before baking.
- You can enhance the flavor by using vanilla extract.
- Chocolate chips, anyone? I like to sprinkle dark chocolate chips into the dough, but if you’re after the intensely sweet flavor go with the classic milk or white chocolate chips.
