Everyone will fall head-over-heels for this classic banana bread recipe. With only a few ingredients and less than 30 minutes to prepare, this moist and delicious banana bread makes a lovely sweet brunch or light dessert.
If there’s something you’ll always find in our home, banana bread it is. Although I had my first banana bread very late in life, about three years ago when we moved to Northern Ireland, it was love at first bite. Ever since I try to bake it as often as I can, my daughter loves it, I love it, everyone’s happy! This banana bread recipe is a classic one, delicious, moist enough, and with an extra banana flavor.

HOW TO RIPE BANANAS IN OVEN
For the banana bread, you will need overripe bananas. If you’re like me, looking for the easiest way to make bananas ripen faster, let me show you how.
Preheat the oven to 350ºF / 180ºC. Place unpeeled bananas about 1-2 inches apart on a baking sheet. For this recipe, you’ll need 3 medium bananas.
Bake for 10-15 minutes, or until evenly browned on the outside. Allow cooling before peeling and scooping out the soft pulp.
HOW TO MAKE BANANA BREAD
We’ll start our banana bread by first beating the butter and light muscovado sugar on medium speed for about 5 minutes, until creamy. You can use a stand mixer or a hand mixer. Add the eggs, then the bananas, mixing well between each addition.
Then sift the flour, baking powder, bicarbonate of soda, vanilla extract, and a pinch of salt, folding them using a metal spoon. To make it your own, you can add any optional extras if you like, pecans, walnuts, or dates.
Poor the mixture into greased, then lined tin (base and sides). You’ll need a 900g (9x5in) loaf tin. If using, add some pecans or nuts on top. Bake the cake for 1 hour, until golden and firm to the touch.
Leave to cool in the tin for a few minutes (5-10mins), then transfer to a wire rack to cool completely.
Slice using a bread knife so the slices won’t cut crumbly. Serve with or without whipped ricotta with honey. Enjoy!

Ingredients
- 113 g unsalted butter softened
- 150 g light muscovado sugar
- 2 large eggs
- 3 overripe bananas mashed
- 280 g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 tsb ground mixed spices
Instructions
- Heat the oven to 180C/160C Fan/350F/Gas 4
- Mix the butter and the sugar on medium speed for 5 minutes, until creamy. Add the eggs, little by little, mixing them well. Use a stand mixer fitted with the beater, or a hand mixer.
- Add in the mashed bananas, the flour, baking powder, bicarbonate of soda, salt, vanilla extract and the ground mixed spices over the top. Fold them using a metal spoon.
- Pour the mixture into a greased and lined 900g (9x5in) loaf tin. Add some pecans (if using) on top. Bake the loaf for 1 hour, until golden, and a skewer inserted into the center comes out clean. Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- Slice using a bread knife so the slices won't cut crumbly. Serve with or without whipped ricotta with honey.
